What does kudzu root taste like?

A protein. Kudzu root tastes like crackers, from what I remember. People at a garden club wouldn't taste it. I had made kudzu brownies, too.

Under trees the roots are useful

Check under trees and look under leaves for leaves and roots you can use. The vines of kudzu can be harvested year round under leaves.

Soon it will be too late to manage the kudzu climbing up trees. Trees can be saved with some trimming of lower branches and the kudzu climbing the trees during dormant season!
