An older couple started farming kudzu for feed for animals a while back. It is possible to grow kudzu, harvest and bale kudzu, and then sell it to people who want something that hasn't been sprayed with pesticides or herbicides or used irrigation to grow. Kudzu does not need fertilizer.
For people who want to do something unique, that is a start.
